Preparation
  1. In a large mixing bowl, combine plain yogurt, olive oil, minced garlic, cumin, paprika, turmeric, coriander, cinnamon, salt, pepper, and lemon juice to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are thoroughly coated. Cover and refrigerate for at least 1 hour or overnight for best flavor.
Cooking
  1. Preheat your oven to 425°F (220°C) or prepare your grill for high heat.
  2. If baking, place the marinated chicken on a lined baking sheet and bake for 25-30 minutes until the internal temperature reaches 165°F (74°C).
  3. If grilling, place the chicken on the grill for about 6-7 minutes per side until thoroughly cooked.
  4. Let the chicken rest for a few minutes before slicing and serving.

Notes

For the best results, use bone-in, skinless chicken thighs, and consider marinating overnight for richer flavors. You can add ingredients like smoked paprika or a splash of vinegar for extra depth.
