  • 1 pkg graham cracker crust Store-bought or homemade
  • 8 oz cream cheese, softened Provides rich texture and flavor

  • 1/2 cup vanilla yogurt or vanilla ice cream Yogurt is a lighter option

Method
 

Preparation
  1. In a large bowl, beat the softened cream cheese with the powdered sugar until the mixture is smooth and creamy.
  2. Add the heavy whipping cream and vanilla yogurt (or ice cream) to the cream cheese mixture. Continue to beat until the filling is thick and fluffy.
  3. Stir in the mint extract and add green food coloring if desired.
  4. Pour the minty filling into the graham cracker crust, spreading evenly.
  5. Refrigerate the pie for at least 4 hours, or overnight for best results.
  6. Once set, top with whipped cream and optional mini chocolate chips before serving.
  7. Slice, serve, and enjoy.

For lighter options, consider using a lighter cream. Feel free to adjust the mint extract to your taste.
