- Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet in a single layer and toast for about 8-10 minutes until lightly golden.
- In a medium saucepan, combine the brown sugar, granulated sugar, and heavy cream. Stir over medium heat until sugar melts and mixture turns glossy.
- Allow the mixture to simmer for 3-4 minutes until it thickens slightly. Remove from heat and stir in the butter, sea salt, and vanilla extract until smooth.
- Gently stir the toasted pecans into the praline mixture until well-coated.
- Drop spoonfuls of the praline-coated pecans onto a parchment-lined baking sheet to form clusters. Sprinkle with extra sea salt.
- Let clusters cool for about an hour at room temperature or refrigerate for 15-20 minutes to set faster before serving.
