  • 1 1/4 cups pecan halves Freshly toasted for best flavor.
  • 1/2 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup heavy cream Enhances the richness of the praline.
  • 3 tablespoons butter Unsalted preferable for taste control.
  • 1/4 teaspoon coarse sea salt Plus extra for sprinkling at the end.
  • 1 teaspoon pure vanilla or rum extract For added flavor.

Preparation
  1. Preheat your oven to 350°F (175°C). Spread the pecan halves on a baking sheet in a single layer and toast for about 8-10 minutes until lightly golden.
  2. In a medium saucepan, combine the brown sugar, granulated sugar, and heavy cream. Stir over medium heat until sugar melts and mixture turns glossy.
  3. Allow the mixture to simmer for 3-4 minutes until it thickens slightly. Remove from heat and stir in the butter, sea salt, and vanilla extract until smooth.
  4. Gently stir the toasted pecans into the praline mixture until well-coated.
  5. Drop spoonfuls of the praline-coated pecans onto a parchment-lined baking sheet to form clusters. Sprinkle with extra sea salt.
  6. Let clusters cool for about an hour at room temperature or refrigerate for 15-20 minutes to set faster before serving.

Notes

For added flavor, try spices like cinnamon or nutmeg, and consider using silicone molds for festive shapes.
