Preparation
  1. Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
  2. In a skillet, cook the ground sausage over medium heat until browned and fully cooked. Drain excess fat and set aside.
  3. In a large bowl, whisk together flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
  4. Stir in the shredded cheddar cheese and chopped green onions into the dry mixture.
  5. In a separate bowl, whisk together buttermilk, eggs, and melted butter.
  6. Pour the wet ingredients into the dry ingredients and gently stir until just combined.
  7. Fold in the cooked sausage until evenly distributed.
  8. Divide the batter among the muffin cups, filling each about three-quarters full.
Baking
  1. Place the muffin tin in the preheated oven and bake for 18-20 minutes.
  2. Allow to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
