Preparation
- Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.
- In a skillet, cook the ground sausage over medium heat until browned and fully cooked. Drain excess fat and set aside.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, black pepper, garlic powder, and onion powder.
- Stir in the shredded cheddar cheese and chopped green onions into the dry mixture.
- In a separate bowl, whisk together buttermilk, eggs, and melted butter.
- Pour the wet ingredients into the dry ingredients and gently stir until just combined.
- Fold in the cooked sausage until evenly distributed.
- Divide the batter among the muffin cups, filling each about three-quarters full.
Baking
- Place the muffin tin in the preheated oven and bake for 18-20 minutes.
- Allow to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
Notes
For variations, try using different types of cheese, add extra veggies, or spice it up with red pepper flakes.
