Preparation
- Heat a skillet over medium heat and add 1 tablespoon of olive oil. Sauté the chopped onions, diced red bell pepper, and minced garlic until soft and aromatic. Set aside to cool.
- In a large mixing bowl, mash cooked lentils slightly, then mix in the cooled vegetables, parsley, egg (or flax egg), Parmesan (or nutritional yeast), breadcrumbs, and spices. Combine well.
- Divide the mixture into equal portions and form into patties about 1/2-inch thick.
Cooking
- In the same skillet, heat the remaining olive oil over medium heat. Cook each patty for about 4-5 minutes on each side until crispy and golden brown.
Serving
- Serve on toasted buns topped with avocado slices, sautéed mushrooms, and fresh lettuce, or enjoy as a side dish with a salad.
Notes
Making the lentil mixture in advance can save time. Optional: experiment with spices like cumin or chili powder for added flavor.
