Method
 

Preparation
  1. Heat a skillet over medium heat and add 1 tablespoon of olive oil. Sauté the chopped onions, diced red bell pepper, and minced garlic until soft and aromatic. Set aside to cool.
  2. In a large mixing bowl, mash cooked lentils slightly, then mix in the cooled vegetables, parsley, egg (or flax egg), Parmesan (or nutritional yeast), breadcrumbs, and spices. Combine well.
  3. Divide the mixture into equal portions and form into patties about 1/2-inch thick.
Cooking
  1. In the same skillet, heat the remaining olive oil over medium heat. Cook each patty for about 4-5 minutes on each side until crispy and golden brown.
Serving
  1. Serve on toasted buns topped with avocado slices, sautéed mushrooms, and fresh lettuce, or enjoy as a side dish with a salad.

Notes

Making the lentil mixture in advance can save time. Optional: experiment with spices like cumin or chili powder for added flavor.
