- Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks. Drain excess fat and transfer to crockpot.
- In the same skillet, sauté diced onions and red bell pepper until fragrant and onions are translucent (about 5 minutes). Add minced garlic and cook for another minute. Transfer to crockpot.
- Pour crushed and diced tomatoes into the crockpot and mix well.
- Sprinkle Italian seasoning over the mixture and add beef broth. Stir to combine.
- Break lasagna noodles into bite-sized pieces and add them to the crockpot.
- An hour before serving, mix in ricotta cheese until fully combined.
- Just before serving, top with shredded mozzarella and Parmesan, allowing it to melt.
- Serve hot, garnished with fresh herbs or additional cheese if desired.
Notes
For a lighter option, substitute ground beef with turkey and ricotta with cottage cheese. For a vegetarian variant, replace meat with lentils and use vegetable broth.
