Method
 

Preparation
  1. Brown the ground beef in a skillet over medium heat, breaking it apart as it cooks. Drain excess fat and transfer to crockpot.
  2. In the same skillet, sauté diced onions and red bell pepper until fragrant and onions are translucent (about 5 minutes). Add minced garlic and cook for another minute. Transfer to crockpot.
  3. Pour crushed and diced tomatoes into the crockpot and mix well.
  4. Sprinkle Italian seasoning over the mixture and add beef broth. Stir to combine.
  5. Break lasagna noodles into bite-sized pieces and add them to the crockpot.
  6. An hour before serving, mix in ricotta cheese until fully combined.
  7. Just before serving, top with shredded mozzarella and Parmesan, allowing it to melt.
  8. Serve hot, garnished with fresh herbs or additional cheese if desired.

Notes

For a lighter option, substitute ground beef with turkey and ricotta with cottage cheese. For a vegetarian variant, replace meat with lentils and use vegetable broth.
