Preparation
- Preheat oven to 350°F (175°C).
- Grease a large baking dish with nonstick spray.
- In a skillet, heat olive oil over medium heat.
- Add diced chicken, season with salt and pepper, and cook until golden brown (6-8 minutes).
- Stir in broccoli florets and uncooked rice; sauté briefly until broccoli turns vibrant green.
- In a bowl, whisk together chicken broth, sour cream, garlic powder, onion powder, and half of the cheese.
- Pour over the chicken mixture.
- Transfer to the prepared baking dish, spread evenly, and top with remaining cheese.
Cooking
- Bake uncovered for 35-40 minutes until bubbly and golden.
- Let rest for 5-10 minutes before serving.
Notes
This casserole can be made ahead of time and refrigerated unbaked for up to a day. Allow to bake longer until heated through.
