  • 2 cups fresh broccoli florets Bright green and crunchy
  • 1 cup long-grain white rice Fluffy grain that absorbs flavors
  • 1 cup shredded sharp cheddar cheese Rich and tangy cheese topping
  • 1 tsp garlic powder Enhances flavor
  • 2 cups low-sodium chicken broth Infuses flavors
  • 1/2 cup sour cream Can substitute with Greek yogurt for a lighter version
  • 1 tsp onion powder Adds depth to flavor
  • Salt and pepper To taste
  • 2 tbsp olive oil or butter For sautéing the chicken

Method
 

Preparation
  1. Preheat oven to 350°F (175°C).
  2. Grease a large baking dish with nonstick spray.
  3. In a skillet, heat olive oil over medium heat.
  4. Add diced chicken, season with salt and pepper, and cook until golden brown (6-8 minutes).
  5. Stir in broccoli florets and uncooked rice; sauté briefly until broccoli turns vibrant green.
  6. In a bowl, whisk together chicken broth, sour cream, garlic powder, onion powder, and half of the cheese.
  7. Pour over the chicken mixture.
  8. Transfer to the prepared baking dish, spread evenly, and top with remaining cheese.
Cooking
  1. Bake uncovered for 35-40 minutes until bubbly and golden.
  2. Let rest for 5-10 minutes before serving.

Notes

This casserole can be made ahead of time and refrigerated unbaked for up to a day. Allow to bake longer until heated through.
