Preparation
- Preheat your oven to 350°F (175°C).
- Prepare your pie crust. If using a store-bought crust, gently place it in a 9-inch pie dish. For homemade, roll out the dough and transfer it into your pie dish.
- Melt the butter in a small saucepan or microwave until slightly cooled but still liquid.
- In a mixing bowl, whisk the melted butter, granulated sugar, cornmeal, and salt together until creamy.
- Stir in the vinegar or lemon juice and vanilla extract.
- Gently pour in the honey and whisk until well combined.
- Incorporate the eggs one at a time, mixing well after each addition.
- Slowly mix in the heavy cream until the filling is smooth.
Baking
- Pour the filling into the prepared crust and bake for 45 to 50 minutes, until the pie is set but has a slight jiggle in the center.
- Remove from the oven and cool on a wire rack. Before serving, sprinkle with flaky sea salt.
