  • 0.5 cup Unsalted Butter Melted and slightly cooled.
  • 0.75 cup Granulated Sugar Can be substituted with brown sugar for a deeper flavor.
  • 0.25 cup Cornmeal Adds texture to the smooth filling.
  • 0.25 teaspoon Salt Enhances the overall flavor.
  • 1 tablespoon Vinegar or Lemon Juice Adds brightness and acidity.
  • 1 teaspoon Vanilla Extract Rounds out the flavors.
  • 0.5 cup Honey Preferably wildflower or clover honey.
  • 3 large Eggs At room temperature.
  • 0.5 cup Heavy Cream Can be replaced with coconut cream for a dairy-free option.
  • 1 pinch Flaky Sea Salt For topping.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Prepare your pie crust. If using a store-bought crust, gently place it in a 9-inch pie dish. For homemade, roll out the dough and transfer it into your pie dish.
  3. Melt the butter in a small saucepan or microwave until slightly cooled but still liquid.
  4. In a mixing bowl, whisk the melted butter, granulated sugar, cornmeal, and salt together until creamy.
  5. Stir in the vinegar or lemon juice and vanilla extract.
  6. Gently pour in the honey and whisk until well combined.
  7. Incorporate the eggs one at a time, mixing well after each addition.
  8. Slowly mix in the heavy cream until the filling is smooth.
Baking
  1. Pour the filling into the prepared crust and bake for 45 to 50 minutes, until the pie is set but has a slight jiggle in the center.
  2. Remove from the oven and cool on a wire rack. Before serving, sprinkle with flaky sea salt.
