Method
 

Preparation
  1. Combine the chopped salmon, breadcrumbs, fresh herbs, lemon zest, minced garlic, salt, and pepper in a large mixing bowl.
  2. Use your hands or a spatula to mix until everything is well incorporated.
Forming Patties
  1. Form the mixture into 4 to 6 patties, depending on your desired size and thickness.
Cooking the Patties
  1. Heat olive oil in a grill or skillet over medium-high heat.
  2. Carefully place the salmon patties into the oil and cook for about 4-5 minutes on each side, or until fully cooked and golden brown.
Making the Tzatziki

Notes
