  • 2 cups shredded rotisserie chicken Canned or store-bought rotisserie chicken works well.
  • 2 medium zucchinis, sliced Use firm and crisp zucchinis for best results.
  • 1 cup heavy cream Can substitute with low-fat alternatives or Greek yogurt.
  • 1 cup shredded mozzarella cheese Divided into two halves for the recipe.
  • 1 cup shredded cheddar cheese Divided into two halves for the recipe.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt Adjust according to taste.
  • 1 teaspoon pepper Freshly cracked is preferable.
  • 2 tablespoons olive oil For drizzling over breadcrumbs.
Optional Topping
  • 1 cup breadcrumbs Use gluten-free if necessary.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the shredded rotisserie chicken, sliced zucchini, garlic powder, onion powder, salt, and pepper.
  3. In another bowl, mix the heavy cream with half of the mozzarella and cheddar cheese.
  4. Combine the chicken mixture with the cream mixture and stir well.
  5. Transfer the mixture to a greased baking dish.
  6. If using breadcrumbs, sprinkle them on top and drizzle with olive oil.
  7. Top with the remaining cheese.
  8. Bake for 25-30 minutes, or until bubbly and golden on top.

Notes

Allow the casserole to rest for a few minutes after baking to set before serving. Serve with a side salad or crusty bread for a complete meal.
