Method
 

Preparation
  1. Cook rotini pasta according to package instructions, then drain and set aside.
  2. In a large skillet, heat olive oil over medium heat until it shimmers.
Cooking
  1. Add the cooked pasta, Rotel tomatoes, black beans, corn, and taco seasoning to the skillet.
  2. Stir everything together and cook for about 5-7 minutes until heated through.
  3. Stir in the shredded cheese until melted.
  4. Season with salt and pepper to taste.
