Preparation
- Preheat the oven to 425°F (220°C).
- Wash and slice the sweet potatoes into rounds about 1/4 inch thick.
- In a large bowl, toss the sweet potato rounds with olive oil, salt, and pepper until evenly coated.
- Arrange the sweet potato rounds on a baking sheet in a single layer.
Roasting
- Roast in the preheated oven for about 20-25 minutes, flipping halfway through.
- Drizzle honey over the roasted sweet potatoes and sprinkle with crumbled feta cheese.
- Return to the oven for an additional 5 minutes until the feta is slightly melted.
- Remove from the oven, garnish with fresh herbs if desired, and serve warm.
Notes
For added depth of flavor, sprinkle on smoked paprika or cayenne pepper before roasting. Top with nuts for added crunch. Avoid overcrowding the baking sheet for maximum crispiness!
