  • 2 cups squash, cubed Zucchini or butternut squash can be used.
  • 2 tablespoons olive oil For the marinade and drizzling over vegetables.
  • 1 large lemon, juiced Fresh juice enhances flavor.
  • Fresh herbs (rosemary, thyme, parsley) For seasoning and garnish.
  • Salt and pepper to taste For seasoning.

Method
 

Preparation
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the olive oil, minced garlic, lemon juice, salt, and pepper. Mix well.
  3. Rub the marinade over the whole chicken, ensuring it is well-coated.
  4. In a roasting pan, arrange the sliced carrots, diced potatoes, sliced onions, and cubed squash around the chicken.
  5. Drizzle the vegetables with additional olive oil, salt, and pepper for extra seasoning.
  6. Sprinkle fresh herbs over the chicken and vegetables.
Cooking
  1. Roast in the preheated oven for approximately 1 hour and 15 minutes, or until the chicken is golden brown and the juices run clear.
  2. Let the chicken rest for 10 minutes before carving.
  3. Serve the roasted chicken with the vegetables on the side.

Notes

For extra crispy skin, broil the chicken for the last 5 minutes. Marinate the chicken for a few hours or overnight if time permits for deeper flavor.
