  • 1 sleeve Ritz crackers Crushed into fine breadcrumbs
  • 4 tablespoons butter Cubed for topping
  • 2 large eggs Beaten for coating
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

Preparation
  1. Preheat your oven to 375 degrees F.
  2. Pound the chicken breasts to 1/2 inch thickness.
  3. Crush the Ritz crackers until they resemble fine breadcrumbs.
  4. In a mixing bowl, combine the cracker crumbs with garlic powder, salt, and pepper.
  5. In a separate bowl, beat the eggs.
Coating and Baking
  1. Coat each piece of chicken in the beaten eggs, then press it firmly into the seasoned cracker mix.
  2. Place the coated chicken in a greased 9x13 inch baking dish.
  3. Dot the top with cubes of butter.
  4. Bake for 25-30 minutes until the chicken is golden and crispy. Optionally, broil for 1-2 minutes for extra crispness.
  5. Spoon the melted butter over the chicken before serving.
