  2. In a medium skillet, heat a splash of oil over medium heat. Add the finely chopped onion and minced garlic, sautéing until softened, which should take about 3-4 minutes. Once done, remove from heat and let cool slightly.
Mixing the Filling
  1. In a large mixing bowl, combine the ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, chopped spinach, eggs, milk, and heavy cream. Mix well, ensuring a smooth combination, then stir in the cooled onion and garlic mixture. Season with dried basil, dried oregano, salt, and pepper to taste.
Baking
