Ingredients
  

Vegetables
  • 2 cups cauliflower florets
  • 2 cups broccoli florets
  • 1 cup carrots, sliced
  • 1 cup Brussels sprouts, halved
Creamy Sauce
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg
Topping
  • 1/4 cup breadcrumbs

Method
 

Preparation
  1. Wash and cut the vegetables into bite-sized pieces.
  2. Blanch the vegetables in boiling salted water for 3-4 minutes, then drain well.
Cooking
  1. In a saucepan, heat the olive oil over medium heat and sauté the minced garlic for 1-2 minutes until fragrant.
  2. Add the heavy cream, thyme, salt, pepper, and nutmeg to the pan, and simmer for 3-4 minutes while stirring occasionally.
  3. Stir in the shredded cheddar cheese until melted.
  4. Combine the blanched vegetables with the creamy mixture in a baking dish and toss gently to coat.
  5. Top with grated Parmesan cheese and breadcrumbs.
  6. Preheat your oven to 375°F (190°C) and bake for 25-30 minutes until the top is golden and bubbly.
  7. Let it cool for 5 minutes before serving.
