Ingredients
  

Main Ingredients
  • 2 pieces ribeye steaks (1.25" thick) Choose steaks with good marbling for tenderness and flavor.
  • 2 tablespoons olive oil For cooking the steaks.
  • Salt & pepper (to taste) Season generously for best flavor.
  • 4 tablespoons butter (divided into 4 pats) To melt on top of the steaks while cooking.
Optional Addition
  • Cowboy butter For serving, enhances the flavor.

Method
 

Preparation
  1. Take the steaks out of the fridge 30-60 minutes prior to cooking for even cooking.
  2. Pat the steaks dry with paper towels and season them generously on both sides with salt and pepper.
  3. Heat a heavy cast iron skillet over medium-high to high heat.
Cooking
  1. When the skillet is sizzling, place the steaks in and let them cook undisturbed for 4 minutes.
  2. Flip the steaks and place a pat of butter on top of each, cooking for another 4 minutes to achieve medium-rare (125°F-130°F).
  3. Move the steaks to a plate or cutting board and allow them to rest for 5-10 minutes.
Serving
  1. Slice against the grain or serve whole, draped in cowboy butter.

Notes

Allowing the steak to rest after cooking is key for optimal juiciness. Pair with sides such as mashed potatoes, asparagus, and finish with dessert for full meal experience.
