Preparation
- Start by thoroughly washing the cucumbers under cold running water to remove any dirt or wax.
- Carefully pat the cucumbers dry with a clean kitchen towel.
- Cut the cucumbers into thin, round slices, approximately ¼ inch thick.
- Place the cucumber slices in a large bowl and sprinkle sea salt evenly over them. Toss gently and let them sit for 15-20 minutes.
- While the cucumbers are resting, prepare the lemon drizzle by combining olive oil, lemon juice, lemon zest, and black pepper in a small bowl. Whisk until well blended.
- After 15-20 minutes, drain any excess liquid from the cucumbers, rinse, and pat dry again.
Assembly
- Transfer the cucumber slices to a serving platter and drizzle the prepared lemon mixture over them.
- If desired, sprinkle with freshly chopped dill and crushed red pepper flakes.
- Garnish with fresh lemon slices and serve immediately.
Notes
For added crunch, chill the cucumbers in the refrigerator for an hour before preparation. Feel free to experiment with herbs like mint or basil.
