Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, whisk together the flour, cocoa powder, baking soda, and salt. Set aside.
- In another bowl, beat the softened butter and granulated sugar until light and fluffy.
- Beat in the egg, vanilla extract, and red food coloring to the butter mixture until well combined.
- Gradually add the dry mixture to the wet ingredients, mixing until just incorporated.
- Form small balls of dough, about 1 inch in diameter, and place them on a baking sheet lined with parchment paper.
- Use your thumb or the back of a teaspoon to press down in the center of each ball, creating an indentation.
Baking
- Place the baking sheet in the preheated oven and bake for 10-12 minutes.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Filling
- In a bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.
- Once the cookies are cool, fill the indents with the cream cheese mixture.
Notes
Room temperature ingredients lead to a smoother batter and filling. Avoid overbaking, especially if they still appear soft in the center. Decorate with white chocolate or sprinkles for a festive touch. If the dough is too soft to handle, chill for 30 minutes before rolling. Consider flavor variations by adding almond extract or lemon zest.
