Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a medium bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt.
- In a large bowl, mix the granulated sugar and vegetable oil until well combined.
- Beat in the egg, then add the red food coloring and vanilla extract.
- Gradually add the dry mixture to the wet ingredients, stirring gently until just combined.
- Chill the dough in the refrigerator for about 30 minutes.
Baking
- Scoop portions of the chilled dough, roll them into balls, and coat each ball in powdered sugar.
- Place the dough balls on the prepared baking sheet, spacing them about two inches apart.
- Bake for 10 to 12 minutes until the edges are set but the centers remain soft.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack.
Notes
For healthier variations, substitute half of the granulated sugar with a sugar alternative, or use whole wheat flour instead of all-purpose flour. You can also add white chocolate chips or chopped nuts for an exciting twist!
