Ingredients
  

For the Cake
  • 1 box red velvet cake mix
  • 1/2 cup water
  • 1/4 cup vegetable oil
  • 2 pieces eggs
For the Cheesecake Filling
  • 8 oz cream cheese, softened at room temperature
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1/4 cup sour cream
For Decoration
  • 1/4 cup mini chocolate chips optional, for a chocolatey twist
  • Red velvet cake crumbs optional, for decoration

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the red velvet cake mix with water, vegetable oil, and eggs, following package instructions.
  3. Pour the batter into a greased 9x9-inch baking dish and bake for 20-25 minutes. Check for doneness using a toothpick.
  4. Allow the cake to cool completely on a wire rack.
Making the Cheesecake Filling
  1. In a separate bowl, beat the softened cream cheese until smooth.
  2. Gradually mix in the powdered sugar, vanilla extract, and sour cream until combined.
Assembling the Bites
  1. Crumble the cooled cake into small pieces in a large mixing bowl.
  2. Scoop small portions of the cake crumble, flatten in your palm, add a dollop of cheesecake filling, and roll into bite-sized balls.
  3. Chill the bites in the fridge for about 30 minutes before serving.
  4. Sprinkle mini chocolate chips or red velvet cake crumbs on top before serving.

Notes

Store leftovers in an airtight container in the fridge for up to a week. Can freeze by separating with parchment paper.
