Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the red velvet cake mix with water, vegetable oil, and eggs, following package instructions.
- Pour the batter into a greased 9x9-inch baking dish and bake for 20-25 minutes. Check for doneness using a toothpick.
- Allow the cake to cool completely on a wire rack.
Making the Cheesecake Filling
- In a separate bowl, beat the softened cream cheese until smooth.
- Gradually mix in the powdered sugar, vanilla extract, and sour cream until combined.
Assembling the Bites
- Crumble the cooled cake into small pieces in a large mixing bowl.
- Scoop small portions of the cake crumble, flatten in your palm, add a dollop of cheesecake filling, and roll into bite-sized balls.
- Chill the bites in the fridge for about 30 minutes before serving.
- Sprinkle mini chocolate chips or red velvet cake crumbs on top before serving.
Notes
Store leftovers in an airtight container in the fridge for up to a week. Can freeze by separating with parchment paper.
