Ingredients
  

Crust
  • 1 cup Graham crackers, crushed
  • 4 tablespoons Butter, melted
Filling
  • 16 ounces Cream cheese, full fat Keep at room temperature
  • 1 cup White sugar
  • 3 large Eggs
  • 1 teaspoon Vanilla extract
Raspberry Swirl
  • 1 cup Fresh raspberries Or substitute with raspberry jam
Optional
  • 1 teaspoon Lemon zest For added flavor

Method
 

Preparation
  1. Preheat the oven to 325°F (165°C).
  2. Crush graham crackers and mix with melted butter. Press into the bottom of a baking pan.
  3. In a mixing bowl, combine cream cheese, white sugar, eggs, and vanilla extract until smooth.
  4. Pour the cream cheese mixture over the crust.
  5. In a separate bowl, mash fresh raspberries. Drop dollops across the cheesecake filling and swirl with a knife.
Baking and Cooling
  1. Bake in preheated oven for about 35 minutes, until set but still jiggly in the center.
  2. Remove from the oven and let cool. Chill in the fridge for at least 2 hours before slicing.

Notes

For a cleaner slice, chill overnight. Pair with hot coffee or serve with extra raspberries and powdered sugar for presentation.
