Method
 

Preparation
  1. Preheat your oven to 180°C (350°F).
  2. In a bowl, mix the flour, sugar, and butter until crumbly.
  3. Add the egg and knead until a smooth dough forms.
  4. Roll out the dough to around 0.5 cm thick and cut into desired shapes.
  5. Place half of the cookies on a baking sheet and spoon a small amount of raspberry jam onto each.
  6. Top with the remaining cookies, sealing the edges to keep the jam contained.
  7. Bake for 10-12 minutes, or until golden brown.
  8. Once cooled, sprinkle with powdered sugar before serving.

Notes

Chill the dough if sticky, experiment with different fruit jams, and ensure cookie shapes are similar for even baking.
