Preparation
- Preheat your oven to 325°F (165°C).
- Line a mini muffin tin with paper liners.
Making the Crust
- In a medium bowl, mix graham cracker crumbs, melted butter, and granulated sugar until well combined.
- Spoon about a tablespoon of the mixture into each muffin cup and press down firmly to form a compact crust.
Making the Filling
- In a large mixing bowl, beat the softened cream cheese until smooth.
- Mix in pumpkin puree, ½ cup sugar, eggs, vanilla, pumpkin pie spice, and salt until fully combined.
Baking
- Pour the pumpkin mixture into the prepared crust, filling each cup about ¾ full.
- Bake for 25-30 minutes, or until the filling is set and slightly puffed.
- Let them cool in the pan for about 10 minutes before transferring to a wire rack.
Chilling
- Refrigerate the bites for at least 30 minutes before serving to enhance flavor.
Notes
Consider adding cinnamon on top for extra flavor. You can also use crushed cookies for the crust or add chocolate chips to the filling for a twist.
