Preparation
  1. In a large mixing bowl, combine protein powder, almond flour, cocoa powder, nut butter, honey (or sweetener), and coconut oil. Mix until well combined.
  2. Roll portions of the dough into balls about the size of a tablespoon and place on a lined baking sheet.
  3. Freeze the baking sheet for about 30 minutes to firm the balls.
  4. Melt the sugar-free chocolate chips using a double boiler or microwave, stirring until smooth.
  5. Dip each chilled ball into the melted chocolate, then place back on the baking sheet.
  6. Add colorful sprinkles on top of the chocolate before it sets.
  7. Refrigerate until the chocolate hardens.
