Preparation
  1. Activate the yeast: Combine warm water, sugar, and yeast in a medium bowl. Let it sit for about 5 minutes until frothy.
  2. Combine dry ingredients: In a large bowl, add flour and salt. Pour in the frothy yeast mixture and stir until a rough dough forms.
  3. Knead the dough: Transfer to a floured surface and knead for 8-10 minutes until smooth and elastic.
  4. Let it rise: Place dough in a greased bowl and cover with a damp cloth. Let it rise for about 1 hour or until doubled in size.
  5. Preheat the oven: Set your oven to 425°F (220°C).
  6. Prepare the baking soda bath: Boil 10 cups of water in a pot. Add baking soda carefully to create the bath.
Cooking
  1. Shape the dough: Punch down the risen dough and divide it into small portions. Shape each piece into loaf forms.
  2. Boil the loaves: Dip each loaf into the baking soda bath for about 30 seconds. Use a slotted spoon to remove and drain.
  3. Egg wash and salt: Brush loaves with egg wash, then sprinkle coarse sea salt on top.
  4. Bake: Place loaves on a baking sheet and bake for 20-25 minutes until golden brown.
  5. Finish and serve: Cool slightly, brush with melted butter, slice, and serve warm.
