- Heat olive oil in a large skillet over medium heat.
- Add small diced onions to the skillet and cook until translucent, about 2-3 minutes.
- Toss in sliced mushrooms, broccoli, green beans, and carrots. Stir-fry for 3-4 minutes.
- Add frozen potstickers and water. Cover the skillet and steam for 5-7 minutes.
- In a separate bowl, whisk together soy sauce, vinegar, sugar or honey, ginger, cornstarch, and cold water.
- Pour the sauce over the stir-fried vegetables and potstickers. Cook for an additional 2-3 minutes until sauce thickens.
- Garnish with sesame seeds and chopped green onions before serving.
Notes
Consider adding minced garlic for extra flavor, a dash of red pepper flakes for heat, or serve over rice or noodles for a more filling meal. Leftovers can be frozen for 2-3 months.
