Preparation
- Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans. Dust them lightly with flour.
- In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer for 3-5 minutes until light and fluffy.
- Mix in the vanilla extract and pink dragon fruit puree until well combined.
- In another bowl, sift together the all-purpose flour, baking powder, and salt.
- Gradually add the dry mixture to the butter mixture, alternating with the milk. Start and end with dry ingredients.
- If desired, add pink food coloring and mix until uniformly distributed.
- Divide the batter evenly between the prepared cake pans.
Baking
- Bake for 25-30 minutes, checking for doneness with a toothpick.
- Let the cakes cool in the pans for 10 minutes before transferring to wire racks to cool completely.
Notes
Use ripe dragon fruit for maximum flavor, consider adding cream cheese frosting, and don’t skip the cooling step for best results.
