Preparation
- Preheat your oven to 350°F (175°C). Prepare a round cake pan by greasing it well. Sprinkle a generous layer of brown sugar evenly on the bottom.
- Arrange the drained pineapple rings over the brown sugar, placing a cherry right in the center of each ring.
Batter Mixing
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
- In another bowl, whisk together the flour and baking powder. Gradually incorporate this dry mixture into the wet ingredients until everything combines smoothly.
Baking
- Pour the batter over the pineapple rings in the cake pan, ensuring it’s spread evenly.
- Bake for 30-35 minutes or until golden brown, and a toothpick inserted comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before carefully inverting it onto a serving plate.
Notes
For more flavor, add a teaspoon of cinnamon to the batter. Consider using freshly sliced pineapple for a less sugary option.
