Preparation
- Preheat your oven to 400 degrees Fahrenheit.
- In a food processor, combine fresh basil leaves, olive oil, toasted pine nuts, chopped garlic, and 1/2 teaspoon of kosher salt. Blend until smooth.

- Grease an 11-inch by 8-inch baking dish with cooking spray.
- Pat the chicken breasts dry and season with black pepper and the remaining teaspoon of kosher salt.
- Arrange the chicken in a single layer in the prepared dish.
- Spread the pesto over the chicken, ensuring to cover each piece.
Cooking
- Bake the chicken in the preheated oven for 20 minutes.
- Remove from the oven and sprinkle with shredded mozzarella.
- Return to the oven and bake until chicken is cooked through, approximately 5 to 8 minutes, or until the internal temperature reaches 165 degrees Fahrenheit.
- If desired, broil for 1 to 2 minutes for a bubbly, golden cheese topping.
