Ingredients

Flatbread Base
  • 1 sheet puff pastry or flatbread store-bought for convenience
  • 1 tbsp olive oil
Toppings
  • 2 pieces pears, thinly sliced
  • 4 oz Gorgonzola cheese, crumbled can be substituted with goat cheese or blue cheese
  • 1/4 cup honey
  • 1/4 cup chopped walnuts can be replaced with pecans
  • 1 handful arugula leaves
  • to taste freshly cracked black pepper

Method

Preparation
  1. Preheat your oven to 400°F (200°C). Lay out your sheet of puff pastry or flatbread on a parchment-lined baking sheet.
  2. Drizzle the sheet with olive oil, spreading it evenly over the surface.
  3. Arrange the thinly sliced pears on top of the flatbread. Overlap them slightly.
  4. Sprinkle the crumbled Gorgonzola cheese generously over the pears.
Baking
  1. Place the flatbread in the preheated oven and bake for 15-20 minutes or until the edges are golden brown and the cheese has melted.
  2. Remove the flatbread and drizzle it with honey. Top with chopped walnuts and a handful of fresh arugula.

Notes

For added flavor, consider adding fresh herbs like thyme or rosemary before baking, or a dash of chili flakes for spice. Let it cool for a couple of minutes before slicing.
