Preparation
  1. Wash the ripe yellow peaches under cold water and slice each peach in half to remove the pit.
  2. In a blender or food processor, add the peach slices, caster sugar, and lemon juice. Pulse until you achieve a velvety-smooth mixture.
Chilling and Freezing
  1. Pour the peach mixture into a suitable container or ice cream maker. If using an ice cream maker, churn according to the manufacturer’s instructions for about 25-30 minutes.
  2. If not using an ice cream maker, place the container in the freezer and stir every 30 minutes until it reaches a soft-serve consistency, approximately 2-3 hours.
Serving
  1. Once the sorbet is firm yet scoopable, serve it in chilled bowls and enjoy.

Notes

For a healthier alternative, consider using sugar substitutes or different fruits. Store sorbet in airtight containers to maintain texture.
