Preparation
  1. Wash the ripe yellow peaches thoroughly. Slice them in half, remove the pit, and set the flesh aside.
Freezing
  1. Chop the peach flesh into smaller chunks and place them in a blender with caster sugar and lemon juice. Blend until smooth.
  2. Pour the mixture into a shallow, freezer-safe dish, smoothing it out. Cover with plastic wrap and freeze for 2-3 hours or until firm.
Serving
  1. Scoop the frozen sorbet into bowls and optionally top with honey or garnish with fresh mint.

Notes

For a creamier texture, blend in coconut milk. Adjust sugar based on the sweetness of your peaches. Store any leftovers in an airtight container.
