- Wash the ripe yellow peaches thoroughly. Slice them in half, remove the pit, and set the flesh aside.
Freezing
- Chop the peach flesh into smaller chunks and place them in a blender with caster sugar and lemon juice. Blend until smooth.
- Pour the mixture into a shallow, freezer-safe dish, smoothing it out. Cover with plastic wrap and freeze for 2-3 hours or until firm.
Serving
- Scoop the frozen sorbet into bowls and optionally top with honey or garnish with fresh mint.
Notes
For a creamier texture, blend in coconut milk. Adjust sugar based on the sweetness of your peaches. Store any leftovers in an airtight container.
