Method
 

Preparation
  1. Wash the peaches, remove the pits, and slice them into 1/4-inch pieces.
  2. In a large bowl, combine the peach slices, granulated sugar, cornstarch, vanilla extract, ground cinnamon, and ground nutmeg. Toss to coat the peach slices and let sit for about 5 minutes.
  3. In a separate bowl, mix the all-purpose flour and brown sugar until well blended, then stir in the melted butter until it resembles coarse crumbs.
Baking
  1. Preheat the oven to 375°F (190°C). Spread the peach mixture into an 8x8-inch baking dish and sprinkle the crumble topping over it.
  2. Bake for 20-25 minutes or until the topping is golden brown and the filling starts bubbling.
Assembly
  1. Line a baking sheet with parchment paper and stand the waffle cones upright.
  2. Mix the honey and warm water, then brush this mixture over the waffle cones.
  3. Once the cobbler is done and cooled for about 5 minutes, fill each waffle cone generously with the peach filling.
  4. Drizzle with any leftover honey glaze and sprinkle with toasted almonds if desired.
  5. Serve warm cones right away with a dollop of whipped cream or a scoop of vanilla ice cream.

Notes

Use ripe peaches for best flavor. For a healthy twist, consider using whole wheat flour and a natural sweetener instead of granulated sugar.
