Preparation
- Wash the peaches, remove the pits, and slice them into 1/4-inch pieces.
- In a large bowl, combine the peach slices, granulated sugar, cornstarch, vanilla extract, ground cinnamon, and ground nutmeg. Toss to coat the peach slices and let sit for about 5 minutes.
- In a separate bowl, mix the all-purpose flour and brown sugar until well blended, then stir in the melted butter until it resembles coarse crumbs.
Baking
- Preheat the oven to 375°F (190°C). Spread the peach mixture into an 8x8-inch baking dish and sprinkle the crumble topping over it.
- Bake for 20-25 minutes or until the topping is golden brown and the filling starts bubbling.
Assembly
- Line a baking sheet with parchment paper and stand the waffle cones upright.
- Mix the honey and warm water, then brush this mixture over the waffle cones.
- Once the cobbler is done and cooled for about 5 minutes, fill each waffle cone generously with the peach filling.
- Drizzle with any leftover honey glaze and sprinkle with toasted almonds if desired.
- Serve warm cones right away with a dollop of whipped cream or a scoop of vanilla ice cream.

Use ripe peaches for best flavor. For a healthy twist, consider using whole wheat flour and a natural sweetener instead of granulated sugar.
