Ingredients
  

For the crust
  • 1 cup all-purpose flour Forms the base of the tart.
  • 1/2 cup unsalted butter (cold) Keeps the crust flaky.
  • 1/4 cup granulated sugar Balances the sweetness.
  • 1 large egg Binds the crust ingredients.
For the filling
  • 1 cup passion fruit pulp Key flavor component of the tart.
  • 2 tbsp lemon juice Adds brightness to the filling.
  • 2 tbsp cornstarch Thickens the filling.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the flour and sugar, mixing with a whisk.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Press the mixture evenly into the bottom and up the sides of a tart pan with a removable bottom.
  5. Bake the crust for about 15 minutes, or until lightly golden brown.
Filling
  1. In another bowl, whisk together the eggs, sugar, lemon juice, and passion fruit pulp until smooth.
  2. Mix in the cornstarch thoroughly.
  3. Pour the filling into the cooled crust carefully.
  4. Bake for an additional 20-25 minutes, until the edges are set and the center is slightly wobbly.
  5. Cool completely before slicing and serving.

Notes

Use cold ingredients for a flaky crust. Don’t overwork the dough. Let the tart cool completely before slicing to maintain filling shape.
