Preparation
- Preheat the oven to 350°F (175°C).
- In a medium bowl, combine the flour and sugar, mixing with a whisk.
- Cut in the cold butter until the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom and up the sides of a tart pan with a removable bottom.
- Bake the crust for about 15 minutes, or until lightly golden brown.
Filling
- In another bowl, whisk together the eggs, sugar, lemon juice, and passion fruit pulp until smooth.
- Mix in the cornstarch thoroughly.
- Pour the filling into the cooled crust carefully.
- Bake for an additional 20-25 minutes, until the edges are set and the center is slightly wobbly.
- Cool completely before slicing and serving.
Notes
Use cold ingredients for a flaky crust. Don’t overwork the dough. Let the tart cool completely before slicing to maintain filling shape.
