Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, mix together the Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, oregano, and basil.
  3. In another bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, and minced garlic until smooth.
  4. Fold the wet ingredients into the dry mixture, seasoning with salt and black pepper to taste.
  5. Pat the fish fillets dry and season with salt and black pepper.
  6. On the baking sheet, place the fish fillets and evenly spread the topping over each one.
  7. Drizzle olive oil over the fish and topping.
Cooking
  1. Bake for 12-15 minutes or until the topping is golden brown and the fish flakes easily.
  2. Let the fish rest for a few minutes before serving, garnishing with parsley and lemon wedges.

Notes

For an added kick, include a pinch of cayenne pepper in the topping. Optionally, use Greek yogurt in place of mayonnaise for a healthier spin.
