Preparation
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- In a medium bowl, mix together the Parmesan cheese, panko breadcrumbs, garlic powder, onion powder, oregano, and basil.
- In another bowl, whisk together the mayonnaise, Dijon mustard, lemon juice, and minced garlic until smooth.
- Fold the wet ingredients into the dry mixture, seasoning with salt and black pepper to taste.
- Pat the fish fillets dry and season with salt and black pepper.
- On the baking sheet, place the fish fillets and evenly spread the topping over each one.
- Drizzle olive oil over the fish and topping.
Cooking
- Bake for 12-15 minutes or until the topping is golden brown and the fish flakes easily.
- Let the fish rest for a few minutes before serving, garnishing with parsley and lemon wedges.
Notes
For an added kick, include a pinch of cayenne pepper in the topping. Optionally, use Greek yogurt in place of mayonnaise for a healthier spin.
