Preparation
- Preheat the oven to 400°F (200°C).
- Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
- In a shallow dish, combine Parmesan cheese, panko breadcrumbs, chopped parsley, minced garlic, dried thyme, dried oregano, paprika, salt, and pepper.
- Brush each cod fillet with olive oil on both sides.
- Press the cod fillets into the Parmesan mixture, ensuring both sides are evenly coated.
- Place the coated fillets on the baking sheet, spacing them apart.
- Drizzle the top of the fillets with olive oil.
Cooking
- Bake for 12-15 minutes until the cod is flaky and the crust is golden brown.
- Serve immediately with fresh lemon wedges.
Notes
Use fresh herbs for better flavor and consider adjusting spices to your preference. Optionally serve with homemade tartar sauce or garlic aioli.
