Ingredients
  

For the crust
  • 1/2 cup grated Parmesan cheese For a rich, nutty flavor.
  • 1/2 cup panko breadcrumbs Adds a light and airy crispiness.

  • 2 cloves garlic, minced Infuses with robust flavor.
  • 1/2 tsp dried thyme Complementary, earthy herb.
  • 1/2 tsp dried oregano Adds aromatic depth.
  • 1/2 tsp paprika Provides warmth and color.
  • 1/4 tsp salt Essential seasoning.
  • 1/4 tsp black pepper Essential seasoning.
For the cod
  • 4 pieces cod fillets (about 6 oz each) Fresh, firm, and boneless.
  • 2 tbsp olive oil For brushing and crispiness.
  • 1 pieces lemon wedges For serving.

Method
 

Preparation
  1. Preheat the oven to 400°F (200°C).
  2. Prepare a baking sheet by lining it with parchment paper or lightly greasing it.
  3. In a shallow dish, combine Parmesan cheese, panko breadcrumbs, chopped parsley, minced garlic, dried thyme, dried oregano, paprika, salt, and pepper.
  4. Brush each cod fillet with olive oil on both sides.
  5. Press the cod fillets into the Parmesan mixture, ensuring both sides are evenly coated.
  6. Place the coated fillets on the baking sheet, spacing them apart.
  7. Drizzle the top of the fillets with olive oil.
Cooking
  1. Bake for 12-15 minutes until the cod is flaky and the crust is golden brown.
  2. Serve immediately with fresh lemon wedges.

Notes

Use fresh herbs for better flavor and consider adjusting spices to your preference. Optionally serve with homemade tartar sauce or garlic aioli.
