Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix together the ground chicken, breadcrumbs, grated Parmesan cheese, mozzarella cheese, marinara sauce, egg, garlic powder, onion powder, salt, and pepper until well combined, being careful not to overmix.
  3. Transfer the mixture into a loaf pan, shaping it snugly into a loaf shape.
  4. Spread additional marinara sauce over the top and sprinkle with crispy breadcrumbs.
Cooking
  1. Bake for 45-50 minutes, or until it reaches an internal temperature of 165°F (74°C) and the top is golden brown.
  2. Let the meatloaf rest for a few minutes before slicing and serving.

Notes

Consider adding herbs like Italian seasoning or fresh parsley for extra flavor. If the mixture is too dry, add a splash of chicken broth. You can substitute marinara with BBQ sauce or mix in vegetables.
