Ingredients
  

For the Panna Cotta
  • 2.25 teaspoons unflavored gelatin powder
  • 3 tablespoons cold water For blooming the gelatin.
  • 480 milliliters heavy cream
  • 120 millilitres whole milk
  • 65 grams granulated sugar
  • 1.5 teaspoons vanilla extract
  • 1 pinch salt
For the Berry Sauce
  • 300 grams mixed berries (fresh or frozen)
  • 50 grams granulated sugar For the sauce.
  • 1 tablespoon lemon juice

Method
 

Preparation
  1. Bloom the gelatin: Sprinkle the gelatin evenly over cold water and let it sit for 5 to 10 minutes.
  2. Heat the cream mixture: In a saucepan, combine heavy cream, whole milk, and granulated sugar over medium heat, stirring until the sugar dissolves and the mixture is hot but not boiling.
  3. Incorporate the gelatin: Remove from heat, stir in the softened gelatin, vanilla extract, and a pinch of salt until fully dissolved.
  4. Portion it out: Divide the mixture evenly among 8 ramekins or molds.
  5. Chill: Let filled ramekins cool to room temperature, then refrigerate for at least 4 hours or overnight until firm.
  6. Prepare berry sauce: In a saucepan, combine mixed berries, sugar, and lemon juice, cooking over medium heat until the berries are soft and the sauce thickens slightly.
Serving
  1. Unmold the panna cotta onto serving plates, spoon the berry sauce generously over top, and enjoy.

Notes

For healthier options, consider using low-calorie sweeteners, coconut milk for a dairy-free version, or agar-agar instead of gelatin for a vegan alternative.
