Method
 

Preparation
  1. In a large pot, heat the olive oil over medium-high heat.
  2. Once hot, add the beef stew meat and cook until browned on all sides, about 5-7 minutes. Remove beef from the pot and set aside.
  3. In the same pot, add the chopped onion and minced garlic, sauté for about 4 minutes until they become translucent and fragrant.
Cooking
  1. Return the beef to the pot and add beef broth, water, and diced tomatoes. Stir well and bring to a gentle simmer.
  2. Toss in the carrots, celery, potatoes, green beans, peas, corn, bay leaf, thyme, and basil, mixing thoroughly.
  3. Season with salt and pepper to taste. Bring to a gentle boil, reduce heat to low, and let simmer for 1.5 to 2 hours.
  4. Remove the bay leaf, taste and adjust seasoning if necessary. Serve hot.

Notes

Consider adding Worcestershire sauce for depth. You can also use frozen vegetables or enhance the flavors with additional spices like paprika or cayenne pepper. Letting the soup sit can enhance its flavors.
