Preparation
- Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.
- In a mixing bowl, whisk together flour, cocoa powder, baking powder, and salt until well combined.
- In another bowl, beat butter and sugar together until light and fluffy (about 3-5 minutes).
- Add the egg and milk, mixing until fully incorporated.
- Gradually fold in dry ingredients until just combined.
- Scoop tablespoon-sized portions of dough onto the prepared baking sheets, leaving space for spreading.
Baking
- Bake for 10-12 minutes or until the edges are set.
- Allow the cookies to cool completely on a wire rack.
Assembly
- Take one cookie and scoop a generous amount of vanilla ice cream onto it.
- Add a scoop of strawberry ice cream on top of the vanilla.
- Cap it off with a second cookie, pressing gently to create the sandwich.
- Repeat the process until all cookies are used.
- Roll the sides in sprinkles or chopped nuts for added flair if desired.
Notes
For enhanced flavor, consider adding chocolate chips to the dough or mixing in crushed cookies into the ice cream. These sandwiches can be frozen for up to a week.
