Preparation
- Preheat your oven to 375°F (190°C).
- Cook the lasagna noodles according to the package instructions until al dente. Drain them and set aside.
- In a skillet, heat olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until they become translucent and fragrant.
- Add the sliced mushrooms to the skillet and cook until they are browned. Then add the fresh spinach, cooking until it wilts down. Season with salt, pepper, oregano, and basil.
- In a mixing bowl, combine ricotta cheese, the egg, and a pinch of salt and pepper.
Assembly and Baking
- Spread a thin layer of marinara sauce on the bottom of your baking dish. Place three lasagna noodles on top, followed by half of the ricotta mixture, half of the mushroom and spinach mixture, and a layer of mozzarella.
- Repeat the layering process with another three noodles and the remaining ricotta, mushroom mixture, and mozzarella. Top with the remaining noodles, marinara sauce, mozzarella, and Parmesan cheese.
- Cover with foil and bake for 25 minutes. Then, remove the foil and bake for an additional 15 minutes.
- Let the lasagna cool for a few minutes before slicing and serving.
Notes
For extra flavor, add a splash of lemon juice or red pepper flakes. Allow to rest for 10 minutes after baking.
