Preparation
- Preheat the oven to 375°F (190°C).
- Heat olive oil in a pan and sauté onions and garlic until soft, about 3-5 minutes.
- Add ground beef and cook until browned, about 5-7 minutes.
- Stir in the tomato sauce, cinnamon, salt, and pepper. Simmer for 10 minutes.
Cooking
- In another pan, fry eggplant and zucchini slices until golden.
- In a baking dish, layer half of the eggplant, the beef mixture, followed by the zucchini.
- Pour béchamel sauce over the top layer and sprinkle with grated cheese if desired.
- Bake for 30-40 minutes until golden and bubbly.
Serving
- Let it rest for 10 minutes before serving.
Notes
Choose firm and glossy eggplants. You can prepare the beef sauce and fry the vegetables a day ahead. Feel free to add a pinch of red pepper flakes for heat. Experiment with different cheeses like feta or mozzarella.
