Method
 

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. Heat olive oil in a pan and sauté onions and garlic until soft, about 3-5 minutes.
  3. Add ground beef and cook until browned, about 5-7 minutes.
  4. Stir in the tomato sauce, cinnamon, salt, and pepper. Simmer for 10 minutes.
Cooking
  1. In another pan, fry eggplant and zucchini slices until golden.
  2. In a baking dish, layer half of the eggplant, the beef mixture, followed by the zucchini.
  3. Pour béchamel sauce over the top layer and sprinkle with grated cheese if desired.
  4. Bake for 30-40 minutes until golden and bubbly.
Serving
  1. Let it rest for 10 minutes before serving.

Notes

Choose firm and glossy eggplants. You can prepare the beef sauce and fry the vegetables a day ahead. Feel free to add a pinch of red pepper flakes for heat. Experiment with different cheeses like feta or mozzarella.
