Ingredients

Main Ingredients
  • 200 grams good quality dark chocolate (or semi-sweet) Use what’s in the cupboard.
  • 1 cup whipping cream For best results, use cold cream.
  • 1/2 cup sugar Use whatever's on sale.
  • 2 large egg whites Beaten until stiff peaks form.
  • 1 teaspoon peppermint extract Use actual baking extract, not the green stuff.
Topping Options
  • as needed mini chocolate chips or shaved chocolate Optional toppings to enhance presentation.
  • as needed mint leaves For a decorative touch.

Method

Preparation
  1. Melt the chocolate gently (a microwave works well, just ensure it doesn't burn).
  2. While the chocolate cools slightly, whip the cream until soft peaks form.
  3. Beat the egg whites in a separate bowl until stiff peaks form.
Mixing
  1. Fold the melted chocolate into the whipped cream gently.
  2. Carefully blend in the beaten egg whites and peppermint extract.
Chilling
  1. Spoon the mixture into bowls or cups and chill for a few minutes before serving.
  2. Top with mini chocolate chips or mint leaves as desired.

Notes

Be careful not to over-beat the cream to avoid turning it into butter. Let the chocolate cool slightly before mixing to prevent scrambling the eggs.
