Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a floured surface and cut it into 3-inch squares.
  3. Heat olive oil in a skillet over medium heat, then sauté the fresh spinach until wilted (about 2 minutes).
  4. Mix the sautéed spinach with crumbled feta cheese and garlic powder in a bowl.
  5. Place a spoonful of the spinach and feta mixture onto each puff pastry square.
  6. Brush each crisp lightly with olive oil and arrange them on a parchment-lined baking sheet.
Baking
  1. Bake for 15-20 minutes until golden brown and puffed.
  2. Serve warm.
