Preparation
  1. In a small bowl, whisk together the lemon juice and kosher salt until the salt dissolves.
  2. Gradually drizzle in the olive oil while whisking to ensure all ingredients blend beautifully.
  3. Place the sliced beets into a large bowl and gently fold in half of the dressing. Allow the beets to soak up those flavors while you prepare the rest.
  4. Just before you’re ready to serve, add the cucumber slices, crumbled feta cheese, fresh dill, and the remaining dressing to the beets.
  5. Toss everything together with a gentle motion—every element should mingle and embrace each other in vibrant harmony.

Notes
