Method
 

Preparation
  1. In a mixing bowl, combine the Castelvetrano olives with the minced garlic, extra virgin olive oil, lemon juice, lemon zest, and chili flakes. Stir together gently and set aside.
  2. In another bowl, crumble the feta cheese and add the Greek yogurt. Blend until creamy and smooth.
  3. Stir in the honey and fresh herbs into the whipped feta mixture, mixing well.
Assembly
  1. Dollop the whipped feta onto a serving platter and arrange the marinated olives around it.
  2. Drizzle some of the marinade over the whipped feta and let the dish sit for about 15 minutes before serving.

Notes

Using high-quality feta will elevate your dish. Consider adding sun-dried tomatoes or artichoke hearts for added flavor. If fresh herbs aren't available, dried herbs can be used in smaller quantities.
