  • 12 oz ripe mangoes Peel, pit, and dice these for the pudding.
  • 2 tbsp cold water Used to activate the gelatin.
  • 1.5 tbsp gelatin Or 1.5 tsp of agar-agar powder for a vegan option.
  • 1.5 tbsp white granulated sugar Enhances the natural sweetness of the mangoes.
  • 0.54 cups coconut milk Full fat for rich texture.
  • 4 tbsp evaporated milk or coconut milk Elevates creaminess.

Preparation
  1. Begin by transferring the diced mango chunks into a blender or food processor. Blend until you achieve a luxuriously smooth puree.
  2. In a small bowl, combine cold water and gelatin. Allow to sit for a few minutes to thicken.
  3. In a saucepan over low heat, add sugar, coconut milk, and mango puree. Gently whisk until combined.
  4. Slowly introduce the gelatin mixture into your mango mixture and stir until completely dissolved.
  5. Pour the mixture into serving bowls or molds. Refrigerate for at least 6 hours, or overnight for best results.
  6. Serve chilled topped with evaporated milk or coconut milk and garnish with fresh mint or a slice of mango.

Notes

Use ripe mangoes for best flavor. Avoid boiling the mixture. For a lighter version, consider low-fat coconut milk and natural sweeteners.
