- Begin by transferring the diced mango chunks into a blender or food processor. Blend until you achieve a luxuriously smooth puree.
- In a small bowl, combine cold water and gelatin. Allow to sit for a few minutes to thicken.
- In a saucepan over low heat, add sugar, coconut milk, and mango puree. Gently whisk until combined.
- Slowly introduce the gelatin mixture into your mango mixture and stir until completely dissolved.
- Pour the mixture into serving bowls or molds. Refrigerate for at least 6 hours, or overnight for best results.
- Serve chilled topped with evaporated milk or coconut milk and garnish with fresh mint or a slice of mango.
Notes
Use ripe mangoes for best flavor. Avoid boiling the mixture. For a lighter version, consider low-fat coconut milk and natural sweeteners.
