Base Ingredients
  • 8 slices Day-old bread (white, wheat, or sourdough) Day-old is best for texture.
  • 1 lb Breakfast sausage or bacon (or veggie sausage) Choose your preferred filling.
  • 8 large Whole eggs Avoid egg whites-only unless on a health kick.
  • 2 cups Milk or half and half Choose based on desired richness.
  • 2 cups Cheese (cheddar, swiss, or pepper jack) Use your favorite cheese.
  • 1 cup Chopped veggies (peppers, onions, or mushrooms) Feel free to mix in any preferred vegetables.
  • 1 tsp Salt
  • 1 tsp Black pepper

Method
 

Preparation
  1. Cut the bread into cubes and layer them in a greased casserole dish.
  2. Pile on the cooked sausage or preferred filling.
  3. Sprinkle the cheese over the sausage and bread.
  4. In a bowl, whisk together the eggs and milk, season with salt and pepper, and pour the mixture over the layered ingredients.
  5. Press everything down gently with a spatula so the bread soaks up the liquid.
  6. Cover the casserole and place it in the fridge overnight.
Baking
  1. When ready to bake, preheat the oven to 350°F (175°C).
  2. Bake the casserole for 45-50 minutes, until set and golden.
  3. If it looks dry in the last five minutes, add a touch more cheese.

Notes

Leftovers can be stored in airtight containers in the fridge for three days. For freezing, ensure the casserole is fully cooled before wrapping. Reheating is best done in the oven, but the microwave is an option for quicker breakfasts.
