  • 2 pieces eggs Helps the coating adhere and creates moist chicken.
  • 1/4 cup milk Adds creaminess to the egg mixture.
  • 1/4 cup olive oil For a golden color and deeper flavor.
Garnish
  • optional Fresh parsley Adds a touch of freshness and color.

Method

Preparation
  1. Preheat the oven to 375°F (190°C).
  2. In a shallow bowl, mix the grated Parmesan cheese, breadcrumbs, Italian seasoning, salt, and pepper.
  3. In another shallow bowl, whisk together the eggs and milk until combined.
  4. Dip each chicken breast into the egg mixture, then into the breadcrumb mixture, pressing firmly.
Cooking
  1. Heat olive oil in a large oven-safe skillet over medium heat.
  2. Sear the coated chicken breasts for about 3-4 minutes on each side until golden-brown.
  3. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken is cooked through.
  4. Sprinkle with fresh parsley if desired and serve hot.

Notes

For added flavor, consider including spices like garlic powder or paprika in the breadcrumb mixture. Use a meat thermometer to ensure chicken reaches 165°F (75°C) to avoid overcooking. Double-dipping can create a thicker crust, and mixing extra Parmesan into the breadcrumb mixture enhances cheesiness.
